Ingredients

For the Chicken Stroganoff:

  • 1 lb (450g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 oz (225g) mushrooms, sliced
  • 1 cup chicken broth (low-sodium)
  • 1 cup sour cream
  • 1 tbsp Dijon mustard (optional for a tangy kick)
  • 1 tsp Worcestershire sauce
  • ½ tsp paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

For the Pasta or Side:

  • 8 oz (225g) egg noodles, cooked (or your preferred pasta or rice)

Instructions

Step 1: Cook the Chicken

  1. Heat the olive oil in a large skillet or sauté pan over medium heat.
  2. Add the chicken pieces and season with salt and pepper.
  3. Cook the chicken for about 6-8 minutes, or until browned on all sides and cooked through. Remove the chicken from the skillet and set it aside.

Step 2: Sauté the Vegetables

  1. In the same skillet, add a little more oil if necessary, then sauté the onions over medium heat for about 3-4 minutes, until softened.
  2. Add the garlic and mushrooms, and cook for an additional 3-4 minutes, until the mushrooms are tender and have released their moisture.

Step 3: Make the Sauce

  1. Add the chicken broth to the skillet and bring to a simmer.
  2. Stir in the sour cream, Dijon mustard, and Worcestershire sauce.
  3. Season with paprika, salt, and pepper to taste.
  4. Let the sauce simmer for 5 minutes, allowing it to thicken slightly.

Step 4: Combine Chicken and Sauce

  1. Return the cooked chicken to the skillet, stirring to combine. Let everything simmer together for another 3-4 minutes so the chicken is heated through and coated in the sauce.

Step 5: Serve

  1. Serve the chicken stroganoff over cooked egg noodles, rice, or mashed potatoes.
  2. Garnish with chopped fresh parsley for a pop of color and added flavor.

Tips for the Best Chicken Stroganoff

For extra richness, you can use heavy cream in place of some or all of the sour cream.
Add vegetables: Feel free to add peas, spinach, or bell peppers for more texture and flavor.
Use a mix of mushrooms: If you like, combine button mushrooms with more flavorful varieties like cremini or shiitake.
Make ahead: You can prepare the chicken stroganoff in advance and store it in the fridge for up to 3 days. Reheat gently on the stove with a splash of broth if necessary.

This Homemade Chicken Stroganoff is perfect for any occasion, from weeknight dinners to special meals, and is guaranteed to be a hit with your family!
