Ingredients

For the Chicken and Vegetables:

  • 4 bone-in, skin-on chicken thighs (or breasts)
  • 4 medium potatoes, cut into 1-inch cubes
  • 1 lb (450g) fresh green beans, trimmed
  • 2 tbsp olive oil
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp paprika (smoked or regular)
  • 1 tsp dried thyme
  • ½ tsp dried rosemary
  • Salt and black pepper to taste

For the Lemon Butter Sauce (optional but recommended):

  • 2 tbsp unsalted butter, melted
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 garlic clove, minced
  • 1 tbsp chopped fresh parsley (optional, for garnish)

Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 400°F (200°C).

Step 2: Prepare the Chicken and Vegetables

  1. Pat the chicken dry with paper towels and place it on a large baking sheet.
  2. In a large bowl, toss the potatoes with 1 tablespoon of olive oil, 1 teaspoon garlic powder, onion powder, paprika, thyme, rosemary, salt, and pepper. Spread them out on the baking sheet around the chicken.
  3. Trim the green beans and place them in the same bowl. Add 1 tablespoon of olive oil, a pinch of salt, and pepper, then toss to coat. Arrange them around the chicken and potatoes on the baking sheet.

Step 3: Bake the Chicken and Vegetables

  1. Roast everything in the preheated oven for about 40-45 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are golden and tender. You can also check the chicken’s skin to ensure it’s crispy.

Step 4: Make the Lemon Butter Sauce

  1. While the chicken and vegetables are baking, melt the butter in a small bowl.
  2. Stir in the lemon juice, lemon zest, and minced garlic. Mix well.

Step 5: Serve

  1. When the chicken and vegetables are done baking, drizzle the lemon butter sauce over the chicken and vegetables.
  2. Garnish with fresh parsley if desired.

Tips for the Best One-Pan Chicken, Potato, and Green Bean Bake

Customize the vegetables: You can swap the green beans for other vegetables like carrots, bell peppers, or Brussels sprouts.
Use chicken breasts instead of thighs if you prefer leaner meat, but be mindful that they may cook slightly faster.
For crispy chicken skin, make sure to pat the chicken dry before seasoning and roasting.
Add cheese: Sprinkle some shredded cheddar or Parmesan over the potatoes and chicken during the last 5 minutes of baking for an extra touch of flavor.

This easy one-pan meal is full of flavor and texture and makes cleanup a breeze! Enjoy your family-friendly dinner.
